Double-bladed shepherd's knife - Olivier
This knife is primarily used by sheep farmers, mainly in the Pyrenees but also in the Massif Central. Generally speaking, it has two crossed blades. The larger one, with a centered point, is the all-purpose blade – because this knife is robust – but also the one for meals. The other, smaller one, with a concave curve and finely sharpened, was used to trim damaged parts of the hoof, so that the disease would not spread. Its two plates, here made of olive wood, are flat, as is the head miter. Finally, during the manufacture of the spring, a small protrusion on the back which, once pierced, allows the chain ring to pass through.
