Bi-blade shepherd's knife

This knife is above all that of sheep breeders, mainly in the Pyrenees but also the Massif Central. Generally speaking, it has 2 crossed blades. The largest, with a centered tip, is the all-purpose blade – because this knife is robust – but also the one for meals. The other, smaller, with a concave curvature and finely sharp edges, was used to trim the damaged parts of the hoof, so that the disease does not spread. Its 2 plates, here in olive wood, are flat, just like the head bolster. Finally, during the manufacture of the spring, a small prominence on the back which, once pierced, allows the chain ring to pass through.
